The Lebanese Turmeric Cake “ Sfouf” Recipe


One of my yummiest and easiest Lebanese cakes is “Sfouf” which means “Rows” in English as it is traditionally cut in to rows before serving. Learn how to prepare this healthy dessert that is characterized by its intense yellow color from the turmeric spice. 

Here are the ingredients:

  • 1 Cup of Flour
  • 2 ½ Cups of Semolina Flour (Known as Theen Ferkha in Lebanese)
  • ½ a Cup of Vegetable Oil
  • 2 Large Tablespoons of Turmeric Powder
  • 4 Tablespoons of Milk
  • 2 Cups of Sugar
  • 2 Cups of Water
  • 2 Tablespoons of Baking Powder
  • 2 Tablespoons Tahini

Here are the steps:

  • Preheat the oven to 180ºC.
  • In a large bowl, mix the flour, semolina flour, turmeric powder, milk and baking powder well.
  • In a separate bowl, dilute the sugar in water. Add the flour mixture to the sugar/ water mixture with the oil and mix well.
  • Grease the bottom and around of baking pan with Tahini.
  • Gradually pour the mixture into the tray.
  • Place the tray in the oven and leave for 30 minutes until the top is golden in color.

  • Leave the Sfouf to cool and then cut into pieces.
You can decorate the Sfouf with Slivered almonds or Pine nuts and serve it with coffee or tea.
