The Lebanese Baba Ganoush


Baba Ganoush is an Arabic word meaning “spoiled father”, is a Middle Eastern dip of mashed potato eggplant and sesame seed paste, served mostly as an appetizer.

According to Middle Eastern food lore, it refers to an elderly, toothless father “Baba” whose daughter had to mash his food because he wasn’t able to chew it.

Here are the ingredients:

  • 2 Eggplant
  • 3 Tablespoons of Tahini
  • 2 Peeled garlic cloves
  • 2 ½ Tablespoons of Lemon juice
  • 1 Teaspoon of Salt
  •  ½ A teaspoon of Pepper

Here are the steps:

  1. Place the eggplant in a tray and enter the tray to the oven for between 35 and 40 minutes until they ripen.
  2. Remove the tray from the oven and leave the eggplant until they cool.
  3. Remove the eggplant crust, then place the pulp in a large bowl and stir well with a fork.
  4. Add to the eggplant the peeled garlic, tahini, lemon juice and salt and mix them well. Stir until ingredients are evenly mixed.
  5. Taste and adjust with salt and lemon juice as needed.
You can decorate the Baba Ganoush in a dish with mint leaves or parsley, pomegranate and olive oil.

You can use this as a dip or even make a Baba Ganoush sandwich topped with sliced cucumbers, tomatoes and parsley.
