Riz B-Haleeb.... The Lebanese Way

How to Prepare Riz B- Haleeb ?





Riz B-Haleeb which is know as Rice Pudding With Pistachios is served as a party dessert after a good Lebanese meal. 

Here are the magic ingredients:

  • 4 Cups of Milk 
  • 1/2 Cup of Rice 
  • 3 Table spoons of Sugar 
  • 2 Table spoons of Cornflour
  • 2 Teaspoons Orange Blossom Water
  • Pistachio as a garnish

Here are the magic steps:

In a heavy pan, pour the milk and start heating on a medium heat.

When the milk stars boiling, add the sugar and stir continuously until all the sugar dissolves and the milk is boiling, for about 5 minutes.

On the other hand, dissolve cornflour in a little milk at room temperature.

Once the rice is cooked in the pan, add the cornflour-milk paste to the boiling pudding on simmering heat and stir along with the orange blossom water before the pudding starts thickening.

Keep stirring and allow the pudding to thicken in about 5 minutes time and switch off heat.First, you need to soak the rice in hot water for 30 minutes.

After draining the soaked rice, add them to the boiling milk, keep stirring slowly for 25-30 minutes until the rice in it is cooked well. 

Add about a handful of pistachios, give a stir and allow to cool to room temperature.

Scoop it out to individual serving cups few minutes before garnishing with pistachio and refrigerating.
