How to Prepare Lebanese Molokhia ?


Whether it is dry or fresh Molokhia, it is always the best dish to gather the family around. Molokhia is made in several ways throughout the Middle East and is also known as jute leaves or Jew’s mellow.

Here are the magic ingredients:


  • 1 Kilo of Molokhia ( Jute Leaves) 
  • 1 Packet of  coriander
  • 1 Whole chicken 
  • 4 Small garlic 
  • 2 Whole cinnamon sticks
  • 1 Cup of Lemon juice
  • 2 Bay leaves
  • 3 Tablespoons olive oil
  • 2 Cups of rice 
  • 2 Tablespoons of Salt 

Here are the magic steps:


1. In a soup bot, place the garlic and the coriander packet and cook them for around 5 minutes.
2. Place the Molokhia above them and cover them with water "The Molokhia must be fully covered with water". Leave them on a normal heat for 30 minutes.
After it boils, add to it one cup of lemon juice and teaspoon of salt.

As for the Chicken:

3. After cleaning the chicken, place it in a large soup bot and add to it the cinnamon, bay leaves, salt and pepper as desired. It should boil for 30 minutes.

4. If you are using the bone-in chicken, remove it after cooking and allow to cool on a plate, then pull the chicken apart into small pieces.
5. Pour the chicken above the Molokhia once the Molokhia is done.

As for the Rice:

6. In a soup bot, place a spoon of olive oil, 2 cups of soaked rice, 4 cups of water and a tablespoon of salt and leave them to boil for 30 minutes. 


PS: Some Lebanese love to toast some bread and place it on the Molokhia plate.  Others love to add to it more lemon or onion.
